The great British Summer has struck again. Our ever changeable weather can have a big impact on what we eat.

I just wanted to send you all a quick recipe for my BAKED PIZZA POTATO BOATS….Not only are they nutritious containing a whopping 13g of protein, they will fill you up on a wet summers day. Serve with lots of salad or with vegetables for a real all round health boost! These are great for a weekend dish that the whole family can enjoy, or can even be wrapped in foil and finished on the BBQ.  To increase your vitamin C intake why not swap the standard potato for sweet potato.  Vitamin C helps the body to repair, develop and grow. Great for a post workout meal too!
